Hi loves, now that Springtime officially sprung, the sun is shining, flowers are blooming. Everything seems bright and colorful, or I might be just so happy because the gloomiest days had past and now that my favorite season has arrived I'm like a big kid who can't hide her excitement.
Easter is on its way, everything about Easter makes us swoon over the colorful flowers, pastel palettes, and never-ending sweets. Well, since we are talking about desserts, I would love to share with you a recipe that I'm planning to have for our upcoming Easter party.
This cupcake is one of my favorites dessert and reminds me of Spring because of the shape of flowers and its colors. I called it soda cupcakes since one of the main ingredients is carbonated drink such a Sprite or any of your favorite carbonated beverage, light cakes, easy to make and super yummy. It's a perfect cake to eat with hot cocoa or coffee while reading my favorite books, and it's also excellent dessert for the afternoon snack. These are one of kids favorites dessert on a Birthday party and very popular on any of my family gathering.
Note: You can also decorate with any of your favorite Icing.

Ingredients:
200gr sugar
2 eggs
200gr standard flour
200 ml soft drink, e.g Sprite or any flavor
1 tsp cake emulsifier In cake or baking emulsifiers improves gas bubble stability, resulting in light, tender and moist product. Or you can omit emulsifier, you just need to beat the egg and sugar batter longer until it is very thick for about 10-15 minutes.
1/2 baking powder
2 tea spoon vanilla essence
1-2 tea spoon cocoa powder
1- 2 drops strawberry flavor
2 drops of food coloring green
2 drops of food coloring pink
Direction:
1. Beat egg, sugar and emulsifier until thick and pale about 10 minutes.
2. Add flour, baking powder, soda or soft drink, vanilla essence. Stir in the flour alternately with the sprites while shaken until thick, mix thoroughly until batter is free from lumps.
3. Transfer some of batter into 3 small bowls and add flavor and colors to each bowls. First bowl 1 drop food coloring and strawberry flavors, second bowl 1-2 spoon cocoa powder, third bowl 1 drops of vanilla flavors and 1 drops green food coloring. Great things about this cupcakes you can choose any flavors or color you want.
4. Spoon the batter into baking paper cup as high as 3/4 and add the colored batter on top until full, alternate the color to your liking. Steam for 20 minutes on high heat.
Ready to serve!
