Cookie Dough Chocolate Chip Cupcakes

When it comes to cupcakes, you don't need to ask. I will be the one who will voluntarily eat them all. It sounds selfish and overindulging cupcakes lover, but these delightful desserts are my guilty pleasure, so I don't blame myself for losing control a bit, or a lot (wink), especially when it comes to Cho-co-la-te desserts. Oh, how can chocolate be so cruel and delicious simultaneously?

When it comes to chocolate desserts, I feel like I was back in my teenage year dealing with my ex-boyfriend; you know he was no good for you, but he was so irresistible at the same time! Urgh!!!

My sister is the family's baker; I like whatever she bakes and eats. So from now and then, I'll drop her a call and ask if she would bake something sweet for me. And today, I bring home mouthwatering delicious Cookie Dough Chocolate Chip Cupcakes, and with her permission, I would love to share this recipe with you.

Oh, by the way, I forgot to put the frosting when we took this picture but believe me, the filling was delicious.

COOKIE DOUGH RECIPE:

  • 1 cup mini chocolate chips

  • 2 sticks unsalted butter, softened

  • 1/4 teaspoon salt

  • 1/4 cup sugar

  • 2 1/2 cups all-purpose flour

  • 3/4 cup brown sugar

  • 1 tablespoon vanilla

  • 4 tablespoon milk

To make cookie Dough:

Put together butter and sugars in a mixing bowl and cream on medium-high speed for about 2 minutes or until light and fluffy. Add milk and vanilla, and beat until smooth. Beat in the flour and salt until mixed; add and stir chocolate chips. Scoop about 1.5 tablespoons of dough at a time. Place cookie dough on a parchment or foil-lined baking sheet. Cover with plastic wrap and freeze overnight.

Preheat oven to 350 degrees and line muffin pans with cupcake liners.

  1. Combine all dry ingredients: flour, sugar, baking soda, salt, and cocoa powder, in the bowl and whisk until mixed well. Add oil and sour cream and mix it with a whisk. Gradually add water and continue to whisk.

Fill cupcake liners 2/3 full with batter.

  1. Bake for 16-18 minutes or until an inserted toothpick comes out clean.

  2. Remove from oven to a baking rack and allow to cool completely.

  3. Make a hollow on the center of your cupcakes using a cupcake corer. Fill the center with cookie dough and frosting. Garnish with chocolate chips.

FROSTING:

  • 3/4 cup salted butter

  • 1 3/4 cups powdered sugar

  • 1/3 cup packed brown sugar

  • 1/2 cup all-purpose flour

  • 1 1/2 tablespoons milk

  • 1 teaspoon vanilla extract

For the frosting, add the butter and sugar and beat until smooth in a medium bowl using an electric hand mixer. Next, add the flour, milk, and vanilla to beat until well-mixed. Finally, remove frosting from a piping bag fitted with a medium star tip.
