Mother's Day Table Decor & Fresh Coconut Pudding Recipe
Mother's Day is around the corner. Do you have an exciting plan to treat your Mother on this occasion?
Last year my sister and I took my Mom to the spa for Mother's Day. After finishing the Pampers, we went home and continued the celebration by having dinner with the whole family. I set up a table complete with a beautiful flower arrangement. We stayed up late and chatted under the stars while lying on the grass with the candles surrounding us. I realized how much fun it was, so much better than eating at the restaurant while your time is limited and everything is so formal. This year I would love to make the same event for my Mother's Day celebration, my kids; are ready to take the role of a party host and waiting for the overload of fun we're going to have!
The pictures from our last Mother's Day celebration with my Mom as a guest of honor. I loved the idea of an English garden party mix and chose my favorite color, pink and white. My sister prepared most of them; my job was providing dessert and flowers.
The cakes stand flowers decor is my favorite; it was fun to do it. My adrenaline pumps up every time I work with floral and working with the flowers I love.
I always lean toward pink colors, maybe because pink is my favorite colors and these myriad colors combination. And truly makes me happy just by looking at it.
Meals were ready inside the refrigerator before we left for the spa. Then, we got home, and my husband, with the kids' help. When I finished up with the decor, the rest of the night was fun, fun, fun!

I slept late to make this, but it was worth the sleepless nights. Our favorite sweet and always the first thing to go. Although it doesn't come up the way I wanted it o, I think it is not too bad for the first-timer. Besides, we all go for the taste, right? So here is how to do it.
Fresh Young coconut pudding
( Vegan Dessert )
Ingredients:
1/2 fresh coconut water
2 cups fresh young coconut/ young Thai Coconut, which you can get at any Oriental Market in your area, or Frozen young coconut meat and water (you can get it from Trader Joe's or on the freezer case at most Whole Food locations)
1/4 cup vanilla soy milk
1 1/2 tablespoon honey ( you can adjust the sweetness to your liking)
1/4 teaspoon sea salt
1/2 teaspoon Vanilla extract
Direction:
1. Put all the ingredients into a blender, use high speed, and blend until it becomes smooth and creamy.
2. Chill for an hour before serving.
3. Top with your favorite fruit such as Blueberry, Strawberries, or Banana.
