Sweet Pumpkin Stew Dessert
Hello, lovelies! Thanksgiving is just days away, and I know some of you are ready with the menu planned for Thanksgiving dinner.
Thanksgiving is all about being around family and delicious food and desserts; turkey and pumpkin pie are the staples of Thanksgiving day. However, since pumpkins are abundant this Fall season, let me introduce you to a super tasty dessert from Indonesia made from pumpkin called Kolak.
This sweet, delicious stew dessert is ideal for the Fall season and perfect for a Thanksgiving party.
You can enjoy it while hot or cold.
Ingredients:
500gr sweet pumpkins or butter squash (cut into small squares)
Two pandan leaves (optional), or you can use pandan extract.
150gr of palm sugar or brown sugar
50gr sugar
1/2 tsp vanilla extract
1/2 salt
1/2 cinnamon or 3 inches stick of Cinnamon water
500 ml of coconut cream or 350-400ml of cream
Sprinkle with Nutmeg or cocoa powder (optional)
Instructions:
Bring the pumpkin, water, brown sugar, sugar, Cinnamon, and pandan leaf to a boil.
Reduce heat Place Coconut cream, salt, and Vanilla extract and keep stirring; let simmer rapidly until pumpkin is tender—about 10 minutes.
Remove from heat and sprinkle with nutmeg or cocoa powder if desired
You can enjoy this when it is hot or cold.
Serving for 6
Recipe Notes:
What is Pandan leaf taste like? Sweet and mild vanilla-like flavor with a subtle undertone of rose and almond, Pandan leaf has a rather sweet/flowery smell.
If you opt for pandan extract, you can place it simultaneously with vanilla extract.
